How to Prepare Artichokes for Cooking Narrator: Essential information from Fine Living. Male: There are several simple yet tasty ways to prepare an artichoke. First, always make sure you pick out artichokes with tight leaves and no blemishes. You want to cut the bottoms and the top off. Scoop out the hair and place in them in the water. For poaching, I like to take two pots, fill each with about a quart of water. And the first one, you’re going to cut three lemons and toss them in with a quarter cup olive oil. And the second, you’re going to cut one lemon and toss it with a half of cup of olive oil. Then bring them both to a boil. Then you’re going to place your artichokes in the first pot. Bring it up to a boil, remove and place in the second pot and cook for five minutes. Then you want to pour the whole thing off into a separate container to cool. To sauté, slice the bottoms evenly. Heat the pan over medium high heat with a quarter cup of olive oil or walnut oil. You cook until golden brown and tender, about five minutes. To roast, toss the artichoke bottoms in olive oil, season with some salt and pepper. You place it in 350 degree oven, toss them occasionally for about 20 minutes.
